A classic recipe of baked cottage cheese casserole. It can be cooked for kids’ breakfast. If desired, sugar can be replaced with fructose, the wheat flour with rice (gluten free). Serve with fruits, berries or nuts.

  • Cottage cheese
    6 cups
  • Eggs
    6 pcs.
  • Flour
    9 tbsp.
  • Sour cream
    9 tbsp.
  • Sugar
    9 tbsp.
  • Vegetable oil
    1,5 tbsp.
  • Lemon zest
    9 tsp.
  • Baking powder
    1 tsp.
  • Raisins
    6 tbsp.

Method

  • Pour raisins with boiling water, leave for 10 minutes. Then drain the water, rinse several times and dry with a paper towel.

  • Gently break eggs into a bowl, add sugar and beat until dissolved with sugar. Use fork, whisk or mixer (the last is faster). Then add the rest of the ingredients and mix well.

  • Rinse lemon, grate the zest and add to the batter.

  • Grease a baking dish with butter, then pour in the batter. Bake in the oven to 392 F for about 50 minutes.

Tips

  • Line a baking dish with parchment paper, then grease with oil.

  • Blend the cottage cheese in a blender until smooth.
