An unusual recipe of cupcakes made of grated zucchinis, wheat flour, eggs and brown sugar. You will get a juicy dessert with vanilla taste. Garnish with any colored ingredients to your taste. If desired, add food coloring to your cream.

  • Zucchini
    2 cups
  • Brown sugar
    3 tbsp.
  • Vanilla extract
    to taste
  • Baking powder
    3 tsp.
  • Vegetable oil
    6 tsp.
  • Chopped pecan
    9 tbsp.
  • Salt
    to taste

Method

  • Sift the flour (sieve cup, sifter). Combine all dry ingredients (brown sugar, baking powder,salt , vanilla extract) in a bowl, including the nuts.

  • Rinse zucchinis, grate them. Break eggs in a bowl, add to the bowl with zucchinis. Combine with dry ingredients. Gently mix until smooth.

  • Transfer the batter into a paper or silicone baking cups, greased with butter. Bake in the oven for 40 minutes at 356 F. Garnish with cream cheese or fruits.

Tips

  • How to check when the cake is done? Pierce the center of the cupcake with a toothpick. If the toothpick is clean, the dish is done.

  • How to cook cream for cupcakes? Mix the following ingredients (per 1 serving): 2 tsp. butter, 1.5 tbsp Ricotta cheese (or Philadelphia), 1 cup powdered sugar.
