A simple cottage cheese cupcake recipe without gluten and sugar. If desired, add the other dried fruits into the batter.

  • Eggs

Method

  • Rub the cottage cheese through a sieve or grind in a blender until smooth.

  • Pour the raisins with boiling water for 10 minutes. Then drain the water, transfer to a paper towel.

  • Crack the eggs. Beat with a whisk, fork or mixer. Then add the cottage cheese. Beat until smooth. Gradually pour in milk.

  • Combine all dry ingredients. Be sure to sift the flour through a sieve. Then combine the dry ingredients with the liquid ones. Add raisins and nuts. Transfer the batter into silicone or paper baking molds, greased with butter.

  • Bake in the oven for 25-30 minutes at 356 F. Transfer the molds with cupcakes to a preheated oven.

Tip

  • How to check when the cake is done? Pierce the center of the cupcake with a toothpick. If the toothpick is clean, the dish is done.
