Peel the onion and garlic. Then finely chop it.
Break the egg and beat it.
Then put the ground beef, chopped garlic and onion, ketchup, provence herbs, bread crumbs and beaten egg to a bowl. Mix everything with your hands.
Then divide this meat mixture into 8 servings and make balls. Heat the frying pan, pour olive oil and brown the cutlets for 1 minute on each side. Then reduce heat to medium and brown for another 2 minutes on each side. At the end put on a paper towel.
Cook sauce. Add chicken broth, flour and tomato puree in a blender. Then pour this mixture to the frying pan, simmer for 3 minutes over moderate heat. Sprinkle with finely chopped parsley.
