Slice the scallions into medium slices. Take a grater and grate the ginger. Place these ingredients in a separate bowl.
Heat a grill pan in advance. Combine the pork, scallions, ginger, garlic, 1 teaspoon of sesame oil, 2 teaspoons of kosher salt, and 1/2 teaspoon of black pepper in a spacious bowl. Proceed to shape the mixture into patties.
Cook the burgers on the grill by flipping them only once, until fully cooked, which should take approximately 8 minutes. Slightly toast the buns on the grill.
While the burgers are cooking, prepare the sauce in a medium-sized bowl by combining apple cider vinegar, soy sauce, and the remaining 1/2 teaspoon of sesame oil. Add salt and pepper to season. Place the patties on the buns and add the coleslaw mix and grated ginger on top. Serve the burgers immediately.
How to make a colesaw mix? It is actually pretty simple. Thinly slice a head of cabbage, and grate 2-3 large carrots. In a large mixing bowl, combine the shredded cabbage and grated carrots. Add 1/2 cup of mayonnaise, 2 tablespoons of apple cider vinegar, 1 tablespoon of honey, 1 teaspoon of mustard, and a pinch of salt and pepper. Mix everything together until everything us combined.
