Method

  • Heat a large skillet and pour in enough water to cover the bottom by a quarter inch. Once the water boils, add the spinach and stir until it wilts, which should take approximately 1 minute. Drain the excess water and press the spinach to remove the excess water. Use a clean cloth or paper towel to wipe the skillet clean, because in the following step it will also be needed.

     
  • Using the same skillet, heat 2 tablespoons of olive oil. Once the oil is hot, add the garlic cloves and pesto paste and cook over high heat while stirring until it becomes fragrant, which should take about a minute. Add the spinach to the skillet and season it with salt. Stir for approximately 10 seconds until the spinach is coated.

  • Preheat the grill. With slightly wet hands, shape the sausage meat into four patties. Brush each patty with oil and grill over moderate heat until the bottom is browned and crusty, which should take around 5 minutes.

     
  • Slightly grill the hamburger buns. Afterward, form the hamburger, spread ketchup and mustard on the bottom of the buns, top with a patty and baby spinach, and add 1 extra teaspoon of pesto paste. Serve and enjoy!

Tips

  • Don't flip the meat too often. Resist the temptation to flip the patties more than once. Let them cook on one side until they are browned and crusty, then flip and cook until the other side is cooked to your liking.
