  • Breadcrumbs

  • Parsley
    8 leaves
  • Smoked paprika

  • Arugula

Method

  • Rinse the lentils under lukewarm running water. Place the lentils in a large pot with 2 cups of water. Bring the water to a boil and let the lentils simmer for about 15 minutes. The grains have to be tender.

  • Combine the cooked lentils, breadcrumbs, diced onion, parsley leaves, smoked paprika, salt, and black pepper to taste. Mix well until all the ingredients are thoroughly combined. Divide the mixture into 4 patties. Preheat the oven to 325°F and prepare a baking sheet with parchment paper. Place the patties on the baking sheet and bake for 25 minutes. After 13–14 minutes in the oven, flip the patties over to the other side. When done, remove them and let them cool down.

  • Build the hamburger by placing arugula leaves on the bottom buns, then add the lentil patty. You can choose any topping of your choice; it all depends on your tastes. A great idea would be pesto or a teaspoon of mustard. Enjoy the dish with some side dishes, potato wedges, or even chips. 

Tips

  • Red lentils are the best option since they have a soft texture and amazing flavor. Moreover, they are easier to blend with different ingredients.
