  • Olive oil
  • Onion, finely chopped
    1 pcs.
  • Flour
  • Boneless, skinless chicken thigh fillets
  • Garlic cloves, crushed
    3 pcs.
  • Baby new potatoes, halved
  • Celery, diced
    2 sticks
  • Carrots, diced
    2 pcs.
  • Mushrooms, quartered
    1 cups
  • Dried porcini mushroom, soaked in 50ml boiling water
    3,4 tsp.
  • Chicken stock cubes
    19 fl. oz
  • Dijon mustard
    2 tsp.
  • Bay leaves
    2 pcs.

  • Heat a knob of butter and olive oil in a large frying pan, cook finely chopped large onion for 8-10 mins until softened and starting to caramelize.

  • Meanwhile, put flour and a little salt and pepper in a bowl and toss boneless, skinless chicken thigh fillets in it.

  • Add crushed garlic cloves and the chicken to the pan and cook for 4-5 mins more until the chicken is starting to brown.

  • Transfer to your slow cooker, along with halved baby new potatoes, diced celery sticks, diced carrots, quartered mushrooms, dried and soaked porcini mushrooms with the soaking liquid, chicken stock, Dijon mustard and bay leaves.

  • Give it a good stir. Cook on Low for 7 hours or High for 4 hours. Remove the bay leaves and serve with a little Dijon mustard on the side.
