Dice the chicken, fry a little in oil, then transfer to a slow cooker. In the same pan where the meat was roasted, cook the vegetables: roast zucchini, peppers, onions, mushrooms and garlic until they are soft, then transfer to the meat in a slow cooker.
Add tomatoes, water and tomato paste to everything on top. Season and cook on low power for 4-5 hours.
