Chicken mushroom stew

  • Boneless skinless chicken breast halves
    6 pcs.
  • Canola oil, divided
    2 tbsp.
  • Fresh mushrooms, sliced
    7,8 oz
  • Onion, diced
    1 pcs.
  • Diced zucchini
    3 cup
  • Chopped green pepper
    1 cup
  • Garlic, minced
    3 clove
  • Tomatoes, chopped
    3 pcs.
  • Tomato paste
    6 oz
  • Water
    4,5 cup
  • Dried thyme, oregano, marjoram, and basil
    2 tsp.

  • Dice the chicken, fry a little in oil, then transfer to a slow cooker. In the same pan where the meat was roasted, cook the vegetables: roast zucchini, peppers, onions, mushrooms and garlic until they are soft, then transfer to the meat in a slow cooker.

  • Add tomatoes, water and tomato paste to everything on top. Season and cook on low power for 4-5 hours.
