First, with the help of a grater, gently grate the ginger. When done, take the garlic cloves, remove their skin, and mince them well. Place them in a medium mixing bowl.
In the bowl with the garlic and ginger, place the soy sauce together with the lemon juice. Mix everything very well, and season the mixture with salt and black pepper. Afterward, take the duck legs and rub the sauce all over the meat.
In an already preheated pan sprayed with 2 tablespoons of olive oil, transfer the duck legs. Fry them for around 7–10 minutes on each side until the skin reaches a crunchy texture and turns a slight brown color. If desired, while frying the legs, add 1 sprig of rosemary.
On a tray with a baking sheet, put the duck legs and transfer them to an already preheated oven at 375°F. Bake the duck for around 20 minutes until it is fully done, its internal temperature should be around 165°F. When done, serve the dish and decorate with rosemary sprigs.
For a more flavorful dish, marinate the duck legs in the ginger sauce for more than 4 hours, or better yet, overnight. It will ensure that the meat will have a soft texture.
