Roasted Duck with Garlic and Carrots

  • Preheat the oven to 375°F. Meanwhile, take the garlic cloves and remove their skin, then mince them very well and place the minced garlic in a separate small bowl. Afterward, wash and peel the carrots' skin and cut them into medium-long slices.

  • In the small bowl with the minced garlic, add 2 tablespoons of olive oil, salt, and dried oregano. Mix everything so the ingredients combine well. When done, transfer the whole duck to a tray with a baking sheet and proceed with rubbing the mixture onto the duck skin, being careful not to miss a spot. 

  • On the same tray, add the cut carrots around the seasoned duck. Sprinkle the carrots with olive oil and a pinch of dried oregano. Bake everything for around 2 hours, until the duck reaches a beautiful golden color and the skin becomes crispier. When done, remove the duck from the oven, let it cool down for a bit, and serve the dish with the desired side dishes. Enjoy!


  • You can add more seasonings if desired, for example, dried thyme, black pepper, and even a pinch of paprika. Experiment and improvise the way you want!

  • This dish can be served with more baked vegetables, such as asparagus or cauliflower. Do not forget to season the vegetables. The more vegetables, the tastier the meal is!
