Preheat the oven to 375°F.
Take the whole duck and season it with salt, black pepper, and dried thyme. Sprinkle 2 tablespoons of olive oil on top of it and rub everything into the duck skins. Be sure to cover all the spots so the whole duck is seasoned. Let the duck sit aside for around 20 minutes so the spices combine well with the duck meat.
Wash the apples. Do not cut the apples; they should be added to the duck in their whole form. If desired, sprinkle the duck with a pinch of cinnamon. The cinnamon and the apples together will give the dish a more delicate and unique taste. Make sure that the apples are of medium size. When done, transfer the apples to the duck.
Transfer the duck to a tray with a baking sheet. Spray the baking sheet with vegetable oil. Add the meat to an oven already preheated to 375°F and bake for 2 hours or more until the meat reaches a slightly brown color and the skin becomes crunchy. Take the duck out of the oven and serve it with a variety of side dishes. If desired, decorate the duck with parsley.
For more flavor, it is better to use green apples for preparing the duck. If you do not have them by your side, golden apples are also suitable!
The roasted duck goes well with a variety of dishes, but as a light dinner, a good suggestion might be to serve this delicious meal with a summer salad.
