Method

  • Wash the pumpkin and peel off its skin and remove the seeds from inside. With a knife, cut the pumpkin into small cubes. Season everything with a pinch of salt and black pepper. 

  • Before baking the duck, preheat the oven to 375°F.

  • Season the duck with salt, and black pepper. Sprinkle the duck with 2 tablespoons of olive oil. Place the duck on a tray and transfer it into the oven. Bake for around 2 hours until the skin becomes crunchy and golden. 30 minutes before taking the duck out of the oven, add the pumpkin cubes to the tray and bake them together with the meat so the juices can combine.

  • Serve and enjoy the dish with a salad or any other side dish, for example, mashed potatoes. 

Notes

  • The duck meat goes well with a lot of seasonings, for example, thyme or oregano. Try to see what suits you the most. Improvise. 

  • It's better to purchase a duck that has its giblets removed. It's required to remove them before cooking, even if it's a farm-raised duck!
