Thin tortillas, vegetable sauce, and sour cream are used to form the simple-to-prepare delicacy known as Mexican enchiladas. Also, if it's stuffed with ham, cheese, and sweet peppers, it becomes the type of meal that you can't put down! Delicious, satisfying, and not time-consuming!

  • Tomato paste
    12 tbsp.
  • Garlic
    8 cloves
  • Bulb onion
    4 pcs.
  • Bell pepper
    4 pcs.
  • Vegetable oil
    12 tbsp.
  • Sour cream
    20 fl.oz.
  • Cold water
    2 cups
  • Salt and spices
    to taste
  • Cold water
    4 glasses

Method

  • First, peel the garlic and onion, and then, fry them in vegetable oil. Cook for a few minutes. After, add the washed and chopped bell peppers and season with salt and pepper. Fry for some minutes. Add the tomato paste and 1 glass of water to the mixture, then simmer the sauce for a few more minutes. Add the sour cream at the very end, then turn off the heat and let it simmer.

  • Preheat the oven to 390°F. Fill the tortillas with the chopped ham, grated or chopped cheese, and roll up the tortillas. Put the tortillas with the filling in a heatproof container. Spread the sauce from Step 1 evenly across the surface and cover with it. Sprinkled with some left cheese. The enchiladas are then placed in a 390°F oven for 15 to 20 minutes.

  • Take the enchilada with ham and cheese out of the oven after the cooking time is up, and garnish with some chopped greens and sour cream. Serve and enjoy the delicious food!

Notes

  • If there is extra filling left, put it on top of the rolls and sprinkle with grated cheese.
