Backed Portuguese sardines

Check out these sweet and peppery crispy sardines, ready in 20 minutes. These are great on a griddle, but will also work on the BBQ when the weather warms up. Serve with a big green salad and lots of crusty bread.


  • Extra-virgin olive oil
    2 tbsp.
  • Garlic, sliced
    3 cloves
  • Smoked sweet paprika
    1 tbsp.
  • Sardines, gutted
    8 pcs.
  • Red chilli, deseeded and finely chopped
    1 pcs.
  • Rosemary, leaves stripped and bruised
    4 springs
  • Lemon, zested and wedged
    1 pcs.

  • Put all of the ingredients, except the sardines, into a bowl and mix together with some seasoning. Pour into a baking dish, add the sardines and toss really well. Cover and chill for a few hours.

  • Heat the oven to 350 F. Cook the sardines for 4-5 minutes on each side, or until really caramelized and charred. Put into a serving plate, drizzle with oil, sprinkle with a little more paprika and squeeze over the lemon wedges.
