Combine salt and flour in a bowl.
Wash the fish under running water. Place the fish on a cutting board or table top. Remove scales using the blunt edge of a knife. Start scraping from the tail to head. Then rinse with cold water, dry with a paper towel. Next, cut off the head and tails, remove all entrails. Dip the fish into flour mixture.
Heat the frying pan, add vegetable oil. Brown the flatfish on both sides until it’s done.
To make sure the flatfish is done, meat should fall off easily.
To prevent fried flatfish from being bitter, it must be properly peeled. The dark part of the fish has an unpleasant bitter taste, so that it does not spoil the prepared dish, carefully remove the black film.
