Clean the mussels. To do this, thoroughly wash them in warm water, and then use a sponge to remove any dirt. Any mussels that might have debris or barnacles should be removed.
Onion and garlic clove skins should be peeled. Next, finely mince the cloves after having chopped the onion.
2 tablespoons of olive oil should be heated up in a big skillet. After that, add the minced garlic and onion to the skillet. The items should be sautéed until the onion is transparent.
Add the diced tomatoes and cook everything in the skillet with the sautéed onion and garlic cloves. Add salt and black pepper to everything, then thoroughly stir all the ingredients. Add the mussels after a few minutes have passed, and simmer everything for an additional seven minutes to completely cook them. When everything is done, sprinkle the dish with fresh parsley leaves. Serve the dish and enjoy!
