Method

  • First and foremost, wash the mussels under lukewarm water and clean them of any dirt and residue that they might have. Scrub them gently with a sponge. Do not cook the ones that are cracked.

  • Now, wash and peel the onion and garlic cloves' skins. Then, with the help of a knife, cut the onion into thin and small pieces and mince the garlic cloves. When done, transfer the ingredients into an already-heated skillet with olive oil.

  • Sauté the ingredients for around 5 minutes until the onion starts to reach a golden color. Then, pour in the diced tomatoes and tomato paste. Mix all the ingredients well until combined, and season everything with salt and black pepper. Cook for around 10 minutes, until the sauce starts to slightly boil.

  • Transfer the green mussels to the skillet with the marinara sauce. Cover with a lid and cook for around 5 minutes until the mussels are opened. If they are opened, it means that the dish is done. Remove the skillet from the heat, serve the meal, and enjoy it with some drinks or side dishes. If desired, sprinkle the dish with dried parsley leaves.

  • How do you choose the right mussels? First, pay attention to their shells; if they have any small cracks, that means they are not fresh and good. Second, they should smell clean and have a slight odor of the ocean.
