Cut the lamb chops into mid-sized pieces. Rinse and blot the chops with a paper towel. Using a knife, cut them into medium sized pieces.
Season with salt and pepper to taste.
Grease the pan with vegetable oil, put the chops and fry on each side over high heat under a lid for about 5 minutes.
Add a glass of boiled water, reduce the heat to a medium, and simmer lightly for about 15 minutes.
The next step is to add a few tablespoons of wine and bring the chops to readiness. Turn the chops periodically. The meat should be soft and there should be no smell.
At the end of cooking, sprinkle generously with dried herbs to your taste and finely chopped garlic.
