Cut the meat into portions, rinse under cold water, pat dry with a paper towel and place in a bowl.
Wash, peel and cut the onion into half rings with a knife, mash it with your hands, add meat to the bowl. Add spices to taste.
Make a mix of pomegranate juice, of olive oil and soy sauce in a 1:1 ratio. We recommend 3 tablespoons of each ingredient per small serving. Add the mixture to the meat.
Mix all the ingredients and add a few mint leaves (to your taste). Leave to marinate for a couple of hours in a fridge (depending on how quickly you need to prepare the dish. If you need to prepare urgently for the arrival of guests, then marinate for an hour without refrigeration, if you are cooking for yourself, you can leave for 2 or more. If you are preparing for several days, then put the marinade in the fridge overnight so that the meat doesn't spoil).
After a few hours, we take our marinated meat and place it on the oven rack. The oven should be in the heat mode of both the top and bottom. Roast the meat for about 30 minutes, at 400-420°F. You don't need to turn the meat. Check after 30 minutes to see if the meat is ready. If not, continue to cook it, but check from time to time to make sure it is not overcooked.
Wash, peel and cut the vegetables.
Place them into a bowl. Add some vegetable oil and soy sauce, leave it for 5-10 minutes. Then add mayonnaise to the vegetables and leave for another 25-30 minutes to marinate.
Place each vegetable from the bowl separately from each other on a grill or large griddle (if there is no grill) and grill them for 5-7 minutes.The vegetables should be soft and let out a little juice.
Put the finished dish on a plate along with the vegetables and serve.
Cooking time depends on your oven and may vary from recipe to recipe.
While cooking meat in the oven, you can additionally pour marinade on top of the meat for juiciness and brightness of taste.
The meat for cooking should be at room temperature. In this case it will be more juicy.
