Fill a pot with water, add salt and pasta. Cook for 1-2 minutes less than indicated on the package. Then drain the pasta in a colander, but leave ½ cup of water.
Peel the garlic, crush in a press or finely cut with a knife.
Grate the cheese.
Rinse the parsley, then finely cut.
Rinse the chicken fillets, dry with a paper towel. Season to your taste with spices.
Heat the frying pan over medium heat, pour in vegetable oil. Brown the chicken for about 7 minutes on one side (until golden crust). Then flip the other side, add butter (a half) and brown again for 7 minutes. Finally, remove the chicken from pan and cut into slices. Cover with foil (to keep the meat hot).
Add the remaining part of butter to the frying pan (where the chicken was browned). Brown the crushed garlic for 30 seconds. Pour in cream, grated cheese, nutmeg and other spices. Mix with a whisk. Simmer for about 4 minutes. Then transfer the sauce to pasta, mix well.
Transfer pasta to the plates, top with chicken slices. Garnish with chopped parsley and cheese.
If the sauce is too thick, add some water from pasta.
Bon Appetit!
