  • Pistachios, unsalted

  • Ricotta
    3 oz
  • Parmesan, grated
    2,4 oz
  • Smoked speck
    1 oz
  • Spring onions, white part, chopped
    4 pcs.
  • Extra-virgin olive oil
    3,2 fl oz
  • Butter
    for frying
  • Short pasta such as penne, maccheroni or fusilli

Method

  • Fry the pistachios in a pan in olive oil for 1-2 minutes, add the onions and speck, fry until the onions are soft.

  • Following the manufacturer's instructions on the package, boil the pasta.

  •  Put nuts, the spring onions, speck and a little of oil in blender. Shred it.

  • Place the pasta on a plate and pour the sauce over it, crumble the grated parmesan and ricotta on top.

Tips

  • If desired, you can add fresh or boiled brocolli to the pasta. It is very tasty and fresh.
