Method

  • Heat the grill to medium heat. Brush a large sheet of parchment with 1 tablespoon of oil. On a lightly floured work surface, roll out the dough into a circle with a diameter of 20 cm. Put on a prepared sheet. Brush with 1 tablespoon of oil on top.

  • Place the dough on the grill. Cook, without turning, until the bottom is firm, 2 to 3 minutes. Using tongs and a large spatula, line the dough on a baking sheet with the browned side up. Put the tomatoes, green onions and cheese on the dough, season with salt and pepper. Grill until cheese begins to melt, 3 to 5 minutes. Place on a cutting board.

  • In a separate container, combine the spinach, avocado, green onions, vinegar and the remaining tablespoon of oil, season with salt and pepper, and stir. Put the mixture on top of the pizza and serve.
