Heat oven to 500 F.
Let the dough brew at room temperature for 30 minutes before stretching or rolling out onto a lightly floured surface with a rolling pin.
When your dough is roughly 10 inches in diameter or ½ inch thick, place it on oiled parchment paper or sprinkled underneath with corn meal to prevent sticking, pizza pan, or pre-heated pizza stone.
Spoon pizza sauce. Cover the sauce with ¾ of the mozzarella cheese.
Place the salami, onion, jalapeños, and olives onto the pizza. Sprinkle with remaining cheese.
Brush edges of pizza with olive oil and sprinkle with onion flakes.
