Sugar must be dissolved in warm water heated to 98.6 F. Then add yeast and leave for 15 minutes until a fluffy cap appears. If the caps still do not appear, then either the yeast is spoiled, or the water is overheated, and the dough will not rise. You need to knead again.
Finely sift the flour into a deep container. Add salt. Stir everything and make a well in the center of the flour.
Pour activated yeast and olive oil into it.
Knead the dough for about 7-10 minutes, until the dough begins to peel off your hands. Cover the bowl with a towel and leave the dough warm for 45 minutes.
Now prepare the filling. Cut the sausage thinly into slices. Grate mozzarella on a coarse grater.
Roll out the dough into a thin round cake.

How to activate yeast?
Pour some water or milk into a container. The exact amount does not matter, because it depends on the recipe.
• For example, if you use ½ cup water to activate yeast, and the recipe requires you to add 1 cup water to the dough, add 1/2 cup (120 ml) instead, as you will add the remaining 1/2 cup of liquid along with the yeast.
Heat liquid to 104 F, so it is warm but not hot and no steam. Although yeast thrives better at lower temperatures, additional heat need to activate dry yeast.
Add a teaspoon (5 ml) of sugar to the liquid. Just warm water is enough to activate the yeast, but the sugar will give you the ability to determine how ready the yeast is. This is a process that will raise the dough and give it a unique flavor. Stir the sugar quickly until it dissolves.
• If you forget to add sugar, you can add the sugar after adding the yeast to the water. This is almost as effective, but stir gently to avoid splashing or damaging the yeast.
Measure out as much yeast as required by the recipe and spread it over the surface of the liquid. Stir for 1 minute.
