Grind the fillet in a blender.
Wash the spinach, remove the stems with a knife. Then blanch it with a boiling water for 4 minutes. After, put the colander in the kitchen sink and pour the spinach. Leave to cool down and cut the spinach leaves into strips.
Add the spinach, 2 eggs and flour to the ground turkey. Season with spices and mix everything.
Pour the flour in a plate. Then make the meatballs by dipping them in flour and a beaten egg.
At the same time heat the frying pan in olive oil. Brown the cutlets on both sides over moderate heat for about 3-4 minutes. Then brown again them over low heat for 4-5 minutes. At the end dry with a napkin.
