Spiced Christmas gammon with membrillo glaze

  • Boneless tied gammon joint
    3 kg
  • Onion
    1 pcs
  • Carrot
    1 pcs
  • Celery
    1 pcs
  • Ground pepper
    1 tbsp
  • Ground allspice
    1 tbsp
  • Ground cinnamon
    1 tbsp
  • Vinegar
    3 tbsp
  • Orange juice
    2 tblsp

  • Start cooking with rinsing meat and placing it a large pot. Then rinse, peel and chop all vegetables on halves and arrange them around the joint, add some pepper. Full pot with water and let it boil for couple hours. Don’t forget to take off any impurities from the water surface.

  •  Next step is heating oven to 180F. Meanwhile, take meat out of the broth and dry it using kitchen paper. Remove from the joint fat and skin. Place it in a baking pan

  • Now it’s time to prepare glaze. So, mix in a small saucepan ¼ tsp. of allspice, ¼ tsp. of cinnamon, 6 tbsp. of membrillo, 3 tbsp. of vinegar, 2 tbsp. of orange juice and cook for 3 minutes. Dip meat in the sauce.

  • Finally, cook joint for 20 minutes and let it rest after for 20 minutes more.
