Let’s start with preheating oven to 425F. Now, rinse and peel sweet potato and make some holes with a fork or knife. Place it on small baking dish covered with parchment paper. Bake it for 40 minutes until it gets a bit roasty.
For next step you’ll need small sauce bowl for combinig fresh lemon juice and 4 tblsp of tahini. As soon it gets smooth add 1 tblsp of water and continue to whisk.
Now, take large bowl and mix beans with 1 tblsp of olive oil. Then heat pan and roast beans in it for 5 minutes. Replace beans to bowl and season with garlic, salt and pepper to taste.
Finally, slice or chop sweet potatoes as you like and cook them in the same skillet with adding of 2 tblsp of olive oil. Don’t forget to add salt and pepper to taste. In large plate mix all ingredients and serve.
