Preheat a pan or griddle over medium heat. Toast the bagel halves until lightly golden brown. Toasting the bagel will give it a nice crunch and help keep it from getting soggy.
Spread the ricotta cheese on one half of the bagel. Layer the ham, prosciutto, and microgreens on top of the ricotta cheese. Place the other half of the bagel on top, making a sandwich.
Press down gently on the sandwich to flatten it slightly. Heat the sandwich in the pan or griddle for 2-3 minutes, or until the cheese is melted and the prosciutto is slightly crispy.
Microgreens are great but you can also use arugula, spinach, or lettuce for a different taste and texture.
A side salad or a bowl of soup can make a great addition to this sandwich for a complete meal.
