Method

  • For the filling, prepare ramson pesto with almonds. To do this, rinse the ramson leaves, dry them on a paper towel, and then chop them coarsely.

  • Toast the almonds lightly in a dry frying pan.

  • Place the almonds in the bowl of a food processor and chop them until they are coarsely chopped. Add the ramson, Parmesan, and, without turning off the processor, pour in vegetable oil in a thin stream. The wild garlic pesto sauce is now ready. Season it to taste with salt.

  • Cut the bagels lengthwise into 2 equal halves. Spread the bottom half generously with pesto and top it with the smoked salmon slices. Brush the top half with cream cheese and place it on top of the filling.

Recommendations

  • Be careful not to over-toast the almonds, as they can burn quickly in the frying pan.
