Are you a banana bread lover? Or do you have 3 ripe bananas, but you have no idea what to do with them? Here's a recipe for amazingly fragrant banana bread that will take you only a short time to make.

  • Bread flour
    6 cups
  • Baking powder
    3 tsp.
  • Brown sugar
    3 cups
  • Nuts
    6 tbsp.
  • Dried apricots
    3 tbsp.
  • Vegetable oil
    9 tbsp.
  • Oatmeal
    6 tbsp.
  • Spices for gingerbread
    to taste

Method

  • Wash, peel and mash the bananas in a puree with a fork in a bowl, mix with eggs and soft/melted butter, next add sugar with spices. Mix until the sugar is dissolved.

  • Add chopped dried apricots and nuts (you can chop it or use the whole pieces), and then add flour with oatmeal. Do it slowly, so there are no lumps. Knead the dough until it resembles a raw loaf.

  • Put the dough into a pre-greased with butter mold and bake the bread for about 1 hour in the oven at 350 °F. Pierce the bread with a spatula to make sure that the dough is not sticky and that the bread is cooked from the inside. Take it out and let it cool slightly.  Remove the bread from the mold and cut it into slices. Enjoy this delicate nut-and-fruit bread with a cup of tea or coffee.

Notes

  • The less you knead the dough, the more tasty and tender the bread will be!

  • When you add the eggs to the batter, separate the egg yolks and mix them together with the bananas, and beat the whites with a mixer or whisk and add them to your mixture. This way the bread will have a more airy and tender consistency.
