Italian no milk donuts

Fluffy homemade donuts, made of flour, yeast and sugar. It is browned in a deep fryer. The donuts became popular in the USA after mass migration of Jews in the early 20th century.
Sprinkle with powdered sugar. Serve with jam, chocolate paste or honey. The perfect pastry with tea or coffee!

  • Wheat flour
    12 cups
  • Dry yeast
    6 tsp.
  • Water
    6 cup
  • Sugar
    6 tbsp.
  • Salt
    3 tbsp.
  • Vegetable oil
    to taste
  • Powdered sugar
    to taste

Method

  • Make dough rise. Bring water to a boil, then wait to cool. The water should be warm, 35-37 Celsius (95 F).  Add dry yeast and sifted flour (1¼ cups) to water (not much, just to mix all ingredients). Mix well. Leave for half an hour to rise (place on a windowsill, in a warm place).

  • When the dough is risen, pour this mixture to the rest of the flour. Add salt and warm water. Knead the dough. Then leave the dough for 1 hour to rise.

  • Warm up a deep fryer, pour in oil. Tear the risen dough into pieces, roll the balls and dip into oil. Brown until golden. 

  • Pour the powdered sugar into a bowl, roll fried donuts.

Tips

  • If you don’t have a deep fryer, use an Iron Pan or heavy-bottomed pot.
