Rye bread in the oven

Recipe from Topfood
Rye bread in the oven
Cooking time: 1 hour
Servings 24
Rye bread is bread made from rye flour. Rye bread is often made with additives such as molasses and cocoa powder to add color and flavor. You can also add cumin seeds for an even more distinctive flavor. Although you can make a loaf with 100% rye, it is generally quite dense and heavy. For a lighter bread with a good rye flavor, mix rye flour with bread flour, which will help improve the structure of the gluten in the dough.

  • First you need to mix flour and salt, add yeast, water and mix everything.

  •  Roll into a ball, cover with a damp cloth and let it sit for 4 hours, lowering the dough 2-3 times.

  •  Add flour, salt, yeast and water to this ball. We form the shape of the bread.

  • Cover with a cloth and leave for 1 hour, making cuts on the top, like on a loaf.

  • Put after the time has elapsed in an oven preheated to 482 °F. After 7 minutes, lower the temperature to 392 °F and bake for 40-45 minutes. To check the bread is ready, you need to knock on the bottom, and if the bread makes a dull sound, then it is ready.

    • You can also add dried fruit to the bread or sprinkle with grains and seeds. Everything is at your discretion.
