Broccoli Salad with Pistachios

This salad features fresh broccoli and apples, pistachios and sweet dried cranberries, tossed in the apple vinegar and maple syrup. You may choose to substitute the walnuts with almonds - just as good!

    4 tbsp
  • Pistachios
    4 tbsp
  • Red onion

  • Olive oil
    4 tbsp
  • Salt
    to taste
  • Apple vinegar
    2 tbsp
  • Maple syrup
    1 tbsp
  • Pepper
    to taste

  • Wash the apples and cut them into small pieces. Then wash the broccoli and cut into small florets. Put the chopped apples and broccoli in a bowl.

  • In a separate bowl, mix the olive oil, apple vinegar, maple syrup and spices. Then add the dressing to the bowl with chopped vegetables. Now sprinkle the salad with peeled pistachios and cranberries, mix well and serve.


  • You can also add the diced feta to this salad.

  • You can lightly sauté the onion before adding it to the salad.
