Divide the broccoli into small florets and blanch in salted water. Meanwhile, cut the green beans in half. Drain the water from the broccoli and put them in a salad bowl. Blanch the beans as well, a little longer than the broccoli, about 5 minutes. Then also add the beans to the salad bowl.
Cut the avocado into strips. Wash the arugula and chop lightly. Put everything in the salad bowl.
Season to taste with olive oil, both vinegars, salt and pepper. Mix everything well. Sprinkle the salad with parmesan and pumpkin seeds before serving.
This salad goes well with fish and grilled meat.
