A simple broccoli salad with pumpkin seeds is never out of place at a casual gathering. Amazingly simple, yet filled with vibrant flavor.

  • Green beans
    8,8 oz
  • Pumpkin seeds
    2,5 oz
  • Parmesan
    4,2 oz
  • Olive oil
    2 tbsp
  • Salt
    to taste
  • Balsamic vinegar
    1,5 tbsp
  • Pepper
    to taste
  • White wine vinegar
    0,5 tbsp
  • Arugula
    0,5 package

  • Divide the broccoli into small florets and blanch in salted water. Meanwhile, cut the green beans in half. Drain the water from the broccoli and put them in a salad bowl. Blanch the beans as well, a little longer than the broccoli, about 5 minutes. Then also add the beans to the salad bowl.

  • Cut the avocado into strips. Wash the arugula and chop lightly. Put everything in the salad bowl.

  • Season to taste with olive oil, both vinegars, salt and pepper. Mix everything well. Sprinkle the salad with parmesan and pumpkin seeds before serving.


  • This salad goes well with fish and grilled meat.
