Chicken salad with grape and cranberries

Chicken salad with grape and cranberries is the great dish for a festive table or dinner. Your guests will appreciate the excellent combination of grapes and chicken breast. The dish is seasoned with mixture of mayonnaise, yogurt and Dijon mustard. Sprinkle with grated cheese if desired.

  • White grape
    2 tbsp.
  • Black grape
    1 tbsp.
  • Dried cranberries
    tbsp.
  • Crushed Pecans
    1,5 tbsp.
  • Mayonnaise
    1 tbsp.
  • Dijon mustard
    tbsp.
  • Yoghurt
    2 tbsp.
  • Salt
    tbsp.
  • Ground black pepper
    to taste

Method

  • Fill a pot with water (1 1/4 cups per serving), add the chicken breast and a pinch of salt . Cook for about 20-25 minutes after boiling.

  • Then remove chicken from the water, cut into small chunks.

  • Then cut all types of grape in half, crush the nuts (pecan) with a knife or in a mortar. Combine all the ingredients in a salad bowl. Season with spices and pour the dressing over the salad. Mix well.

How to make dressing?

  • Mix the following ingredients: mayonnaise, yogurt and Dijon mustard. Then pour over the salad.

Tips

    • How to choose chicken meat? Buy the chicken with a light pink skin. Besides that, it should have a very mild smell or no odor.
    • Remove the grape seeds and then add to the salad.
