Egg Salad with Greens and Apple Vinegar Dressing

This egg salad is a super-simple and low-carb recipe that tastes great on its own, but also shines in a number of other dishes.


  • Salt
    to taste
  • Egg
    4 pcs.
  • Red onion
    1 pc.
  • Arugula
    1 bunch
  • Radishes
    1 bunch
  • Dill, parsley or spring onion
    0,5 bunch
  • Apple vinegar
    3 tbsp.
  • Olive oil
    3 tbsp.
  • Pepper
    to taste

  • Boil the eggs, let them cool for a couple of minutes and then, remove the shells.

  • Meanwhile, peel and finely cut the red onion. Wash and dry the arugula. Wash and cut the radishes into thin slices. Wash the greens, dry and cut.

  • In a separate bowl, mix the onion, salt, vinegar, olive oil and pepper. Mix all ingredients with the dressing.


  • Serve the salad with baked potatoes.
