Peel and finely chop the pineapple, mango and kiwi. Cut the vanilla pod lengthwise and scrape out the pulp.
Mix the mascarpone, honey, orange zest, vanilla pulp, and coconut syrup or coconut liqueur and blend until smooth (sweetness can be adjusted by adding more honey or syrup/liqueur, depending on taste). If the mixture is too thick, add some milk until you get a homogeneous, but not too watery cream.
Then take the bowls and arrange the fruits and cream mixture in layers, alternating. Decorate your fruit salad with the coconut shaving, mint and/ or lime wedge before serving.
Make sure your fruits are thoroughly dried before assembling your salad.
You can change the composition and quantity of fruits depending on the season or your taste.
