The first and foremost step is to cook the barley. Pour water into a large saucepan and season with 1 teaspoon of salt. In the cold water, add the barley grains, and place the saucepan on the stove. Bring the water to a boil, then reduce the heat to medium and simmer for around 30 minutes until the barley is tender. After that, drain all the excess water and let it cool for 15 extra minutes.
While the barley is cooking, chop the rest of the ingredients: cherry tomatoes, shallot, bell pepper, dill, and mint leaves. In addition, mince the garlic cloves. Place all the cut ingredients into a large mixing bowl.
Take a grater and shred the parmesan. An easier way to grate it is to cut the cheese in half and then proceed with shredding it. After that, put the cheese on a small plate.
In a large mixing bowl, place all the ingredients and season the salad with 1 tablespoon of lemon juice, 1 teaspoon of salt, and black pepper to taste. Mix the meal until all the flavors are combined. Enjoy the dish and discover how tasty barley can be in a salad.
The barley grains go well with sour ingredients; therefore, an amazing idea would be adding 2 tablespoons of lemon zest to the salad. Grate the lemon skin with a grater and add it to the salad, mixing thoroughly to ensure an even lemon flavor.
