Farro salad with broccoli is a simple meal with a distinct and enticing flavor. Broccoli and farro are the stars of this salad; the combination is spectacular. It is ideal for a family dinner or a supper with friends since it will amaze everyone.

  • Farro grains
    2 cups
  • Egg yolk

  • Lemon juice

  • Apple cider vinegar

  • Mustard

  • Broccoli

  • Red onion

  • Cucumber

Method

  • First, boil water in a medium pot; after it is fully boiled, add the farro grains. Salt the water with 1 teaspoon.  Cook for about 15 minutes. Afterwards, let the farro cool down.

  • Take the following vegetables: red onion, broccoli, cucumber, and radish. Chop them, and after that, mince a few garlic cloves. 

  • This salad requires a fantastic sauce. It is quite simple to make. Put the following ingredients in a blender: egg yolk, lemon juice, apple vinegar, mustard, minced garlic, and 2 tablespoons extra virgin olive oil. Mix until the texture is creamy and distinct.

  • It is time to combine all the ingredients in a large bowl. First, take the broccoli and break it into medium-sized pieces. Season it with one grated garlic clove, and let it marinate for 5 minutes. The following step is to put the rest of the ingredients in the bowl: onions, chopped cucumber, dried tomatoes, and of course the prepared farro. Do not forget to add the sauce! Now it is time to mix the salad and enjoy its delicate taste.

Tips

  • How the farro looks when it is fully cooked? Farro looks similar to barley when cooked, but it has a chewier consistency.

  • Some might not prefer dried tomatoes; therefore, instead of them, you can use fresh tomatoes. When putting them in the salad, slice them.

  • Mint leaves can be substituted by parsley, rosemary, or tarragon. When using these herbs, chop their leaves and add them to the salad.
