Before boiling the farro, it has to be soaked in water for around 12 hours. After those hours pass, it is time to cook it. Take a large saucepan, add 3 cups of water with 1 teaspoon of salt, then 2 cups of farro. Place the pan on the stove and boil it on average heat for around 30 minutes. When finished, drain the access water and leave it to cool for 10 minutes.
The next step is preparing the chicken breast. Pre-heat the oven to 425° F. Cover the tray with a baking sheet. Season the chicken with a pinch of black pepper and 1 teaspoon of cumin, then pour 1 tablespoon of olive oil on top of it. Roast for 15–18 minutes, until the chicken is cooked through.
In a medium pot, pour 2 glasses of water and add 1 teaspoon of salt. Bring it to a boil, and then add the 3.5 ounces of asparagus. Cook uncovered until tender, for about 4 minutes. After it is prepared, drain the excess water and let it cool for an additional 15 minutes. When the time has passed, chop the asparagus.
The following ingredients have to be cut into thin slices: cherry tomatoes, scallions, and the chicken breast. Moreover, a super important step is to grate the parmesan. Take a grater and carefully shred the cheese. Put all those ingredients into a large mixing bowl.
In the mixing bowl where the vegetables, chicken, and parmesan are, add the rest of the ingredients: farro, walnuts, dried cranberries, and asparagus. For the seasoning, add 2 teaspoons of lemon juice, a pinch of black pepper, and salt. Mix everything well and enjoy its amazing taste with a cold soda.
