A really simple recipe that may appear dubious at first glance turns out to be one of everyone's all-time favorite salads after one bite. The pistachios in the salad will give it some crunch. This can be a festive dish that can quickly become the centerpiece of a family dinner.

  • Farro grains
    4 cup
  • Salt
    a pinch
  • Pistachios
    10 oz.
  • Grated lemon zest
    4 tsp.
  • Fresh lemon juice
    4 tbsp.
  • Fresh ginger, peeled and grated
    2 tsp.
  • Sugar
    1 tsp.
  • Olive oil
    9,2 fl oz.
  • Black pepper
    2 tsp.
  • Parsley mixed with mint
    2 cup
  • Golden raisins
    6,8 oz.

Method

  • The first step is to prepare the farro. For this, boil water in a large pot, and add a little salt. After the water is fully boiled, add the farro grains and cook until ready. It usually takes around 20–25 minutes.

  • It is time to roast the pistachios. Place a baking sheet on top of a pan, then place the pistachios on the baking sheet and roast for about 8 minutes. 

  • It is now time to season the meat. The following ingredients are needed: lemon juice, lemon zest, salt, ginger, and oil. First, take a bowl and mix all the ingredients together, except the oil. While whisking at a constant speed, drizzle in the oil. 

  • In a large mixing bowl, combine all of the ingredients: cooked farro, pistachios, parsley, and golden raisins. Mix everything super well, and do not forget to season the salad. Enjoy!
