The first step is to prepare the farro. For this, boil water in a large pot, and add a little salt. After the water is fully boiled, add the farro grains and cook until ready. It usually takes around 20–25 minutes.
It is time to roast the pistachios. Place a baking sheet on top of a pan, then place the pistachios on the baking sheet and roast for about 8 minutes.
It is now time to season the meat. The following ingredients are needed: lemon juice, lemon zest, salt, ginger, and oil. First, take a bowl and mix all the ingredients together, except the oil. While whisking at a constant speed, drizzle in the oil.
In a large mixing bowl, combine all of the ingredients: cooked farro, pistachios, parsley, and golden raisins. Mix everything super well, and do not forget to season the salad. Enjoy!
