The first step is to prepare the quinoa; for that, pour water in a pan and salt it with 1/2 teaspoon. After that, in the cold water add the grains and cook for around 20 minutes, until the quinoa becomes tender. Take the pan from the heat and strain the excess water, then let it cool for about 5 minutes.
The following ingredients have to be chopped into small pieces: cilantro, celery, scallions and pecans.
In a large bowl, put the cooked quiroa, scallions, celery, cilantro, raisins, and pecans; mix all of them together. Season the salad with 2 tablespoons of lemon juice, a pinch of black pepper, 1 teaspoon of salt, and 1 tablespoon of olive oil. Let the salad rest for 30 minutes so the flavors can blend better. Serve the dish and combine it with a piece of grilled chicken breast.
If you do not prefer raisins in a salad, try substituting them with dried currants. They are super delicious and high in nutrients such as sodium, iron, and potassium.
