Boil water in a medium pot. After that, add the quinoa grains and one teaspoon of salt to the pan and cook for 14-15 minutes. Drain the quinoa and let it cool for around 10 minutes.
It's time to make the sauce. In a small mixing bowl, combine the lemon zest, parmesan, lemon juice, and vinegar. Continue whisking until the sauce has a creamy consistency.
Take a lemon and, in a small bowl, grate its zest. Another very important ingredient is the parmesan; therefore, also grate it.
Finally, combine all of the ingredients in a big mixing bowl: quinoa, walnuts, parsley leaves, and, of course, the sauce. Mix everything thoroughly and enjoy the delicious flavor of this salad.
If you want a more green salad, add some barley leaves to the salad; not only will the meal taste better, but it will also be more nutritious.
This Quinoa salad can serve as a great family dinner. This meal is best complimented by apple or orange juice for beverage.
