Quinoa Salad

This is one of the most delectable salads that will make your mouth water. The star of the recipe is quinoa, a grain full of minerals such as fiber, magnesium, and potassium. The preparation may take some time, but the results will be spectacular because this salad is highly delicious and appetizing.

  • Quinoa
    15,9 oz.
  • Lemon zest
    3 tsp.
  • Asparagus
    21 oz.
  • Snow pea
    10,5 oz.
  • Radish
    6 pcs.
  • Lemon juice
    3 tbsp.
  • Onion
    2,1 oz.
  • Parsley
    3 tbsp.
  • Black pepper
    1,5 tsp.
  • Salt
    1,5 tsp.

Method

  • First of all, give the quinoa a good wash. Put the grains in a pot with water or vegetable broth and boil for around 15 minutes. While the quinoa is cooking, add 1 teaspoon of grated lemon zest and cover the pot. After a few minutes, remove the quinoa from the heat and set aside for 5-7 minutes to cool. 

  • While the quinoa is cooling, it is time to boil the small slices of asparagus and snow peas. Take a pot and boil water. Throw the vegetables into the boiling water and cook for 3 minutes.  

  • Take the radishes, onion, and parsley and cut everything into thin and small slices.

  • Now, in a large mixing bowl, combine all of the remaining ingredients with the prepared ones. For a better taste, season the salad with pepper, lemon juice, and sea salt. Enjoy your supper once it's ready!

Tips

  • The salad is delicious on its own; but, if you want to add more veggies, add some kohlrabi or chives.
