First of all, give the quinoa a good wash. Put the grains in a pot with water or vegetable broth and boil for around 15 minutes. While the quinoa is cooking, add 1 teaspoon of grated lemon zest and cover the pot. After a few minutes, remove the quinoa from the heat and set aside for 5-7 minutes to cool.
While the quinoa is cooling, it is time to boil the small slices of asparagus and snow peas. Take a pot and boil water. Throw the vegetables into the boiling water and cook for 3 minutes.
Take the radishes, onion, and parsley and cut everything into thin and small slices.
Now, in a large mixing bowl, combine all of the remaining ingredients with the prepared ones. For a better taste, season the salad with pepper, lemon juice, and sea salt. Enjoy your supper once it's ready!
The salad is delicious on its own; but, if you want to add more veggies, add some kohlrabi or chives.
