Wash the potatoes under running water, then transfer to a pot and fill with water. Cook for about 20 minutes until tender. When it’s done, drain the water and transfer to a large bowl of ice (the fastest way to cool a potato). Finally, cut into slices.
Wash the herbs and green onions, finely chop them.
Peel the red onion, cut into rings.
Combine the chopped ingredients in a large bowl. Season with spices to your taste, add oil and vinegar. Stir well!
