Wash the potatoes under running water, then peel and cut in half. Transfer the potatoes to a pot, fill with water. Cook for about 20 minutes until tender. Drain the potatoes, cut into slices.
Peel the garlic. Crush in a press or finely chop.
Wash the parsley under running water, finely chop.
Combine the chopped potatoes and parsley, crushed garlic in a salad bowl. Pour in oil and vinegar. Season to your taste and mix well. Serve hot!
