Wash the potatoes under running water, then peel. Transfer the potatoes to the pot, fill with water and add salt. Cook for about 20 minutes until tender. Finally, drain the water and let the vegetables cool.
Wash the shallots and herbs under running water, finely chop them.
Finely chop the cornichons.
Combine the following ingredients in a bowl: mayo, olive oil, vinegar.
Cut the cooked potatoes into small pieces. Combine with other chopped ingredients in a large bowl. Add the mayo mixture and season with spices to your taste. Stir well!
To cool a hot potato, transfer it to the large bowl and pour in ice. This method preserves the color and taste of potatoes.
