Sweet raisins, crunchy nuts, tangy arugula - this dish is an interesting combination of flavors and textures. The salad is heartier with turkey meat, but you can exclude turkey - the dish will be vegetarian. Spinach leaves can be used instead of arugula for the salad.

Method

  • Boil water with half a teaspoon of salt. Add couscous (3-4 tablespoons per person) and raisins. Stir, cover with a lid, remove from heat and let stand for 5 minutes. After this time, transfer it to a bowl.

  • Peel and roast the nuts in a pan, stirring, until golden, for 5 minutes (or in the oven at 175 F for 10 minutes). Slice them. Nuts can be any kind: walnuts, hazelnuts, peanuts, pistachios or almonds. If you are allergic to the nuts, then you can replace them with sesame or sunflower seeds.

  • In a glass or stainless steel bowl, mix together the lemon juice, a quarter teaspoon of salt and pepper. Slowly pour in the olive oil, stirring the dressing constantly.

  • Combine the carrots, nuts, turkey, arugula or spinach, a pinch of salt, cooled couscous and raisins. Stir the salad with prepared dressing.

  • To get the most out of couscous, it is important to choose it correctly, because a spoiled product can seriously harm your health. To choose the highest quality groats, you need to know what to pay attention to when buying:
    Appearance - what you should focus on in the first place. It should be beautiful and even pellets, all about the same size, without black flecks, without additives and debris.
    Composition. Good couscous should be made from durum wheat. This is necessarily indicated on the package. If the grits are made from rice or barley, the quality of the grain must be the highest. Also, the composition should not contain anything but grains, water and sometimes salt.
    The date of manufacture and sell-by date. A good cereal has a shelf life of no more than a year from the date of manufacture. It is worth taking the freshest product. 
    The print is too small. If the manufacturer is trying to hide the composition on the package, he has something to hide, and you should refrain from buying this brand.
    The container. Most often the container for couscous is made of paper or cardboard. This is a good option, since the product is better stored in paper. You can also take the groats in a cloth bag.
    Damage to the packaging. Any, even the slightest damage on the container is unacceptable. The product is better stored in paper, thus this is an excellent choice.
