Preheat your oven to 374°F. Wash, peel and cut the potatoes as desired (into wedges or sticks). Peel the garlic and finely chop. Now toss the potatoes well in a bowl with the pepper, lemon juice, garlic, oil, vegetable broth, salt and tomato paste.
Put the potatoes with herbs (and liquids) on a baking dish. Then cover it with the aluminum foil and put in the oven for 35-40 minutes. The potato pieces should be turned over from time to time.
After 20 minutes, you can remove the foil and bake for another 15-20 minutes, until most of the liquid has evaporated and the potatoes are lightly browned.
You can decorate with the sprigs of herbs before serving.
